Cook your quinoa in water, 1 cup of quinoa to two
cups water. Bring it to a boil, cover and let simmer until all the water is
absorbed. Roughly 20 minutes. Set aside and allow to cool, as you will be using
your hands soon enough.
In a large bowl, mix the quinoa with garlic, herbs (I
like fresh basil), onions, lemon zest and juice…really whatever you’d like. I
throw in some parmesan cheese followed by roughly a ¼ cup of bread crumbs and
two eggs. You definitely have some culinary freedom here, so long as you can
form them into patties when you’re done.
You only need about 1 tbs of olive oil to fry these
babies up. Keep the heat low so they heat all the way through
without burning.
Voila – delicious and healthy!
I like to top mine with a little sauce I adapted from
Rachel Ray. It’s two parts Greek Yogurt (low-fat) to one part Feta Cheese
(reduced fat). Add in some lemon juice, garlic and fresh cracked pepper.
